EXXCEL was hired to provide design-build services to help bring this new bakery online quickly and efficiently. EXXCEL’s Vice President of design, with his 20+years of experience in food processing design, analyzed the electrical and mechanical systems for improved efficiency, creating over $1 million in cost savings.
The 168,000 sf bakery was built for the production of sandwich buns and rolls for quick serve restaurants. The space includes a 21,000 sf -10F freezer, ingredient storage and mixing, and 10,000 sf corporate offices. The building utilizes a conventional steel structure, interlocking composite roof panels by Environtech with r-17 insulation, and R-52 walls with R-7 insulation. The primary production line produces over 90 dozen buns per minute, the facility was designed to be able to support a second line.
